{ the perfect Saturday a.m. complement}

1 large egg
10 large egg whites
1/2 tsp sea salt
1 tbsp garlic (more or less to taste)
1/2 tbsp olive oil
1/2 yellow onion, diced
1/4 C red pepper, diced
1/4 C mushroom, diced
1 jalapeno, diced
a handful or two of grated parmesan or mozzarella ( I used both).
(*ricotta would also be a delectable addition.)
freshly ground black pepper, to taste

preheat oven to 375.
whisk together egg, whites, salt and pepper. set aside.
heat oil in a large, heavy skillet, preferably 10-inches.
add onion. cook til translucent.
add garlic & remaining veggies.
cook til they begin to soften.
add egg mixture.
add cheese.
stir once or twice to distribute evenly.
place skillet in the oven.
bake for 10 minutes, til eggs are set.
pour your coffee. or your tea.
and dig in.

makes for a lovely morning.
could make for a lovely evening.
heck, I would eat this any time of the day.
it's pretty delicious.
